whole thirty thursday

We've addressed how much I don't love cooking, so it should be no surprise that finding a Whole 30 recipe I can successfully make has proved to be difficult. I've found the easiest way for me, so far, is to take recipes I make normally and adjust them to meet the Whole 30 rules. That is where THIS amazing recipe comes in. 

This chili was a hit at my house long before we started the Whole 30 so I just made some tweaks to make it compliant. The basic recipe is compliant except the beans, so I throw in zucchini instead. I always skip the adobo sauce and that's usually cause I am a wuss, but in this case it's because it usually has sugar in it. The next part is sad...the original recipe calls for fritos, sour cream and cheese as toppings. WOMP WOMP. Since all those things are not compliant with the Whole 30 we just top ours with avocado or guac. Super simple. Just how I like it.



The recipe also says to use ground chicken...but I just boil some chicken, throw it in the kitchen aid and shred. That's right. I got this tip from my sister and it really works. Just use the paddle attachment thingy and it shreds the chicken super quickly. My brother in law also likes to use this chili more as a filler for a taco/burrito. So if you have any non Whole 30ers at your house they should totally try it.

whole thirty thursday

The Davis household has just embarked on our second Whole 30, well except for coffee. I drank disgusting coffee the first go around and decided that on this second time a little cream in my coffee had to happen. We did our first in May and it was definitely an experience. We lost a few pounds but gained a whole new perspective on processed foods, sugar, and our snacking habits. For me it has really improved my eating habits. While I won't say no to a cupcake, I have learned that living off sugary coffee and gluten free chocolate chip cookies is probably not my wisest choice. 
If you know me at all, you might know that cooking isn't among the things I enjoy doing. My sister (Devan) is the cook and the health nut. I am so grateful for all her help along this Whole 30 journey. She is crazy and  took on the challenge of helping me (a non cooker) and my husband (a mid western, meat and potatoes kind of guy) which was no easy task. She eased us into the Whole 30 with this meal...just hers was more fancy(don't even ask me how she makes a whole 30 compliant vodka sauce type thingy). This recipe is super easy and fool proof. In fact it's not a recipe at all.  It's legit just zucchini noodles, a can of spaghetti sauce and some ground beef. 

You will need a spiral vegetable cutter (we used this one) to make your zucchini noodles. It's pretty easy to use and doesn't take long. Always buy more zucchini than you think you will need cause it will cook down. Once you get all your zucchini spiraled add some olive oil and put it over medium heat. Some people sweat the zucchini first but that's just an added step ya'll, and it tastes the same in the end.
While your zucchini is warming up just cook your ground beef and heat up your sauce. That's right pour that store bought sauce into a pan and heat it up. I keep it real around here. The sauce I used is Whole 30 compliant!!


I mean its spaghetti guys. But if you need a Whole 30 meal that's super easy and quick this will be your jam. Also TU peeps, definitely using a fiesta ware bowl from the DC. For real.
